I've modified some of these recipes to fit my dietary needs, but ultimately these recipes are healthy-ish, delicious and very easy to make.

Very cool. You should do a step by step post where you make a recipe and demonstrate each step and talk about what works, what doesn't, and what you did differently. :-)
